Pina Coladas on the Perch
Here’s the recipe for the fabulous pina coladas we drank this summer on Nantucket.  I created this recipe based on a version I found on a web site called www.pinacoladarecipe.org.  The “.org” somehow makes it seem as though this is a government run site, which I find hilarious.  Let’s hope our taxpaying dollars aren’t going towards perfecting the ideal pina colada!
1 Pina Colada
2 oz Myer’s dark rum
2 oz pineapple juice
1-2 oz Coco Lopez Crème De Coconut
1 cup of ice
Pour all ingredients into your blender and blend until smooth.  If you’re going to go through the trouble of making a festive drink like this one, I think you should take the time to pour it into a fun glass and garnish with a cherry and perhaps a slice of orange.  A small, paper umbrella or plastic sword will hold the fruit in place, and the end result will make your guests feel like they’re in the Caribbean.  I would recommend using Myer’s Dark Rum since it has so much flavor.  It really makes the drink.  Please do not use white rum, which pales in comparison to the Myer’s.  Take my word for it, and just don’t do it.  The members of my family are not big fans of white rum (some have used words like “crap” and “garbage” to describe it), but that’s a tale for another time…
